Can I hide client fees from certain team members on job or Kanban cards?

Not per user, no - there's no permission that restricts fee visibility to specific team members.

The only current option is unticking Fee in the card layout menu, which hides it for everyone on that board rather than just certain people. A more granular, per-permission control has been logged as a product request.
